So far I was able to make my own Kimchi twice. But I can't say if they are close to the real thing. I have never been to South Korea. I have never tasted a kimchi made by a Korean. Mine is salty and I am not sure if that is the way it should be. I used the Barrio Fiesta's Spicy Bagoong as a substitute for Anchovies. For those who wants the recipe please visit Maangchi's Blog.
